White Chocolate and Strawberry Cake Batter Bites

This is for sure going to be your Valentine’s Day slam dunk recipe. I wanted to put a festive spin on traditional cake batter bites and what better way to do that than with white chocolate and strawberries?  It’s an upgrade on the cake batter bite flavor with a pop of Valentine’s color! The topping and tweaking potentials to the basic cake batter bites are virtually endless…or leave them naked as is! The best part? The ingredients are simple and the steps are a piece of cake (all puns intended)!

 

I was first introduced to this recipe when my friend Brittney brought KaleKoture’s original cake batter bites to a Christmas party this past year.  They didn’t last very long… and when I saw they didn’t last very long, they were DEVOURED. I love this recipe because it is wildly versatile and customizable to any season and flavor.

Why You'll Love These Cake Batter Bites

The richness of the white chocolate perfectly balances the slight tartness of the strawberries

Handy Tools/Equipment

8×8 baking dish (I usually use the simple disposable aluminum brownie ones)

Pizza cutter

Strawberry slicer

Ingredients for this Recipe

Cakemix:  We’re going to keep it stupid simple.  I like Pillsbury brand yellow cake mix

White chocolate chips:  I am a fan or the Ghirardelli white chocolate chips because I think they are the richest, but any brand will get the job done

Eggs: add the structure and stability

Butter: acts as a fat and adds richness

Strawberries: the perfect Valentine’s Day berry

Cornstarch, lemon juice, and sugar: help to perfect the consistency of the strawberry mixture giving you a jam-like filling

Piping bag and a #10 piping tip (you can also use a Ziplock back with the corner tip snipped off)

Sprinkles: I used a seasonal nonpareil Valentine’s Day mixture

How to Make this Recipe

  1. Preheat oven to 350°F
  2. Line your 8×8 baking dish with parchment paper.  Do. Not. Skip. This. Step.  If you skip this step, you better be ready to eat your batter bites out of the pan with a fork.  I’ve tried to grease the pan with cooking oil, but it doesn’t work as well.
  3. Dice up strawberries (I used my handy strawberry slicer that is linked above) and add them to a bowl with lemon juice, cornstarch, and sugar.  The combination of these ingredients will make an amazing tart jam-like filling when it’s cooked.
  4. Using a medium saucepan, cook your strawberry mixture on medium heat, stirring frequently. They will take about 10-12 minutes to cook down.  You should end up with a gelatinous-like puree.  Once cooked, chill your strawberry mixture in the refrigerator. 
  5. Combine your cake mix, room-temperature eggs, melted butter, and white chocolate chips. Mix in your sprinklers LAST so the color from the sprinkles won’t bleed into your batter mixture. It’s going to be THICK…think mixed cement thick.
  6. Spread the batter mix into the pan and flatten it down with your hands or a kitchen spatula  Kitchen pearl- spread some cooking oil on your hands or spatula to keep the batter from sticking.
  7. Bake in a preheated oven for 18-20 minutes.
  8. Once the batter bites are done baking, immediately transfer the dish to the fridge for several hours.  They will still be pretty soft when you remove them from the oven so you need the cook temperate in the refrigerator to firm them up so you can slice them with ease.
  9. Once chilled in the refrigerator for several hours, remove from the refrigerator and invert the pan on a cutting board. Because you lined the pan with parchment paper, the cake batter bite block should pop right out.
  10. Use your pizza cutter to slice up the cake batter bite block into bite-sized squares. 
  11. Grab your strawberry puree out of the refrigerator and spoon the puree into your piping bag with a #10 tip or a Ziplock bag with the corner snipped off.  Pipe your puree onto each individual bite and enjoy

Kitchen Pearls

Do not skip lining your pan with parchment paper. It’s a 0/5 star good time to try to get them out of the pan if you forget.

Spread some cooking oil on your hands or spatula to keep the batter from sticking when placing it into the pan

Ingredients
  • 1 box white cake mix
