White Chocolate and Strawberry Cake Batter Bites

Ingredients
  • 1 box white cake mix
  • 2 eggs, at room temperature
  • 2 cups white chocolate chips
  • 1 stick melted butter
  • 2 cups diced strawberries
  • 1 teaspoon cornstarch
  • 1 tablespoon lemon juice
  • 3 tablespoons granulated sugar
  • sprinkles of your choice
Instructions
  • Preheat oven to 350 ℉.
  • Line your 8x8 baking dish with parchment paper.
  • Dice up strawberries and add them in a bowl with lemon juice, corn starch, and sugar.
  • Using a medium saucepan, cook your strawberry mixture on medium heat, stirring frequently. They will take about 10-12 minutes to cook down.  You should end up with a gelatinous-like puree.  Once cooked, chill your strawberry mixture in the refrigerator. 
  • Combine your cake mix, room temperature eggs, melted butter, white chocolate chips. Mix in your sprinkles LAST so the color from the sprinkles won't bleed into your batter mixture. It's going to be THICK.
  • Spread the batter mix into the pan and flatten it down with your hands or a kitchen spatula  Kitchen pearl- spread some cooking oil on your hands or spatula to keep the batter from sticking.
  • Bake in a preheated oven for 18-20 minutes.
  • Once the batter bites are done baking, immediately transfer the dish into the fridge for several hours.
  • Once chilled in the refrigerator for several hours, remove from the refrigerator and invert the pan on a cutting board. Because you lined the pan with parchment paper, the cake batter bite block should pop right out.
  • Use your pizza cutter to slice up the cake batter bite block into bite-sized squares.
  • Grab your strawberry puree out of the refrigerator and spoon the puree into your piping bag with a #10 tip or a Ziplock bag with the corner snipped off.  Pipe your puree onto each individual bite and enjoy!
